Let them eat cake!
Marie Antoinette and the French knew their pastries and cakes and so does one of our master pastry chefs, Mark.
Mark has been creating in the kitchen since the age of 4. Mark is a Vancouverite that has pastry skills, cake decorating, sculpting, recipe development and a teaching background. You may recognize Mark from his showcase at Cake Love 2012, his appearance on the Food Network’s Recipe to Riches reality show or Cartems, Vancouver’s hit gourmet donuterie, which he developed original donut recipes.
I had a chance to interview Mark and look into the world of wedding cakes
Where do you get you design inspiration come from?
For me it comes from every day life. I always have my eyes open to things I see that I can apply to cake decorating. From seeing patterns/designs in clothing to walking through the art supply stores and seeing different sculpting/painting tools, I’m thinking of different designs and techniques to adapt and employ.
How long have you been a professional baker?
Since I was a child I’ve been making edible creations at home. Throughout my years working at the bank, I was the go-to guy for getting desserts for office events. It wasn’t until 2009 that I began apprenticing with a professional wedding cake decorator that I was fully immersed in the art.
What are the biggest trends in wedding cakes this year?
I’ve noticed more and more people leaning towards the “non-traditional” cakes. Cupcakes, cake pops and more recently, donut wedding cakes have become an item being asked for.
What is your favourite wedding cake? Why?
My favorite wedding cake I’ve done so far was a “fast food” inspired cake consisting of a large hamburger, with a hot dogs and monogramed box of french fries on top. I definitely enjoy a challenge in my work and making this cake employed various decorating techniques to achieve the look. By far, this was the cake that stopped people in their tracks as I put on the finishing touches at the venue.
How far in advance do I need to order my wedding cake?
To make sure that couples receive the wedding cake that they’ve dreamed of, it would be best to book as early as possible. Depending on availability, an absolute minimum of 2 weeks is necessary.
If I didn’t want a traditional wedding cake what would you suggest?
Think of what you love in a cake/dessert or any other sweets. I’ve seen wedding cakes made of rice crispy squares, pies/tarts and cookies which have all been decorated so elegantly that it just fits the occasion. I am open to any sort of requests and am open to anything.
